I got the beautiful lettuce cups from Costco and kind of adjusted the recipe around. It originally was inspired by this cashew and chicken recipe but I had no chicken or cashews so I just improvised! (which explains the lack of accurate measurements)
Ingredients:
- Ground turkey (1lb)
- Water chestnuts (1 can chopped)
- Ginger (two thumbs worth)
- Garlic (3-4 cloves)
- Onion (1/2 chopped)
- Sesame oil (1 tsp)
- Rice vinegar (1 tbsp)
- Brown sugar (1/4 cup)
- Soy sauce (1 tbsp)
- Oyster sauce (2 tbsp)
- Cook ground turkey in your pan
- Add minced garlic, ginger, onion and water chestnuts
- Whisk together the sesame oil, rice vinegar, brown sugar, soy sauce and oyster sauce. Taste and add more to your liking.
- Add sauce to the meat mixture and let it incorporate for a few min before cooling and serving in lettuce cups
